About Pastry King’s Princess

Pastry King’s Princess is a family-run baking company established over 60 years ago. This is our short story on how we came into business. We believe our story is filled with nothing but a constant love for baking. From Pastry King to Pastry King’s Princess, the passion for baking delicious cakes and cookies has always been in our blood.


Under the King


As a young man, Ralph immigrated to Canada with just his bakery apprentice papers in hand. He began working in various bakery settings and was appreciated for the Dutch recipes he brought to the table. He decided to start his own business and launched his first pastry shop on King Street in downtown Brockville named Brock Pastry. Ralph also opened a second pastry shop which was called Dandy Donut. It was during the late 1970s that Pastry King came to life as Ralph’s third successful pastry establishment following Brock Pastry and Dandy Donut. Pastry King saw years of continuous success in business. Later, after his children were all grown-up, the King had to discontinue his practice due to an unfortunate illness.

The Baking Traditions Continued


After starting her own family, the King’s daughter, Ingrid, and her husband decided to renovate their garage out in the country and set up their own bakery. Princess, as Ingrid was called by her father, decided to continue the family business of baking Dutch treats. Thus, Pastry King’s Princess was born, with Ingrid as its owner and operator. For 25 years now, she has ensured to keep up the King’s Dutch baking traditions. 

 

Pastry King’s Princess has today branched out the dessert line from primarily Dutch treats to include Canadian based squares, cookies, and a speciality line of cakes and designer cookies. With Opa, the King, as the supervisor (from above), Ingrid today works diligently to keep her Dutch roots and family ingrained in the foundation of her warm and welcoming bakery, tucked in the woods of Lyn.
